Steps
- 1
Beat 4 eggs, 20 drops of sweetener, and the oil together using an electric mixer.
- 2
Gradually add the almond flour and sifted baking powder, mixing as you go.
- 3
Add 1/3 cup (about 40 grams) of cocoa powder and continue mixing with the electric mixer for at least 3 minutes.
- 4
For this recipe, you'll need a tart pan with an indented base. Brush it with sunflower oil, then pour in the batter. Bake at 350°F (180°C) for 30 minutes in a convection oven.
- 5
Now, prepare the cream. Take the remaining 2 eggs and separate the whites from the yolks, placing them in two separate bowls.
- 6
Beat the egg whites with a pinch of salt until stiff peaks form.
- 7
Add 10 drops of sweetener to the yolks and beat until light and fluffy. Then add the mascarpone and mix well with a spatula. Gently fold in the beaten egg whites until combined.
- 8
Once the cake base has cooled, turn it out of the pan and soak it well with the unsweetened coffee (as you would for a tiramisu). Fill the indentation with the cream.
- 9
Dust with the remaining cocoa powder and refrigerate until ready to serve.
