Wash and cut all vegetables and crush in a food processor.

Soak and wash poha, strain and put in a big mixing bowl.

Add chopped veggies, rava and curd.

Add salt and spices and mix well Lastly add soda and water and make a thick smooth batter.

Heat oil in a pan and put vada batter with spoon.

Deep fry the vadas till crisp from outside and golden brown in colour.

Remove from oil and fry all vadas like this.

Serve hot atukulu/poha vadas with peanut coconut chutney.
