In a medium bowl, beat the cream cheese until smooth and fluffy. If you are making your own crust, mix together graham crackers, sugar, and butter until well combined.

Incorporate egg, sugar, and vanilla extract into the mixture. Stir until fully combined, then transfer the mixture onto your prepared crust. (You can either make your own crust or purchase pre-made ones.)

Prepare your cream cheese mixture and commence frying your apples. Combine the apples with cinnamon, nutmeg, water, butter, and vanilla extract. Stir until all the apples are thoroughly coated and well mixed. Place the mixture on medium heat and allow it to simmer until the apples become tender.

Once softened, turn off the heat and remove the cheesecake from the stove top. Place a small spoonful of the apples on each cheesecake.

Preheat your oven to 375 degrees Fahrenheit. Bake the cookies for 25 to 30 minutes. I personally prefer to freeze them, but you can also refrigerate them once they have cooled down.
