Prep the Poha :-
∆ Wash the poha gently in water for 1–2 minutes.
∆ Drain completely—poha should not become soft.
∆ Cover and let it sit for 5 minutes to naturally soften. - 2
Mix the Basics :-
∆ Transfer the soaked poha to a bowl.
∆ Add salt, chopped green chillies, lemon juice, and fresh coriander.
∆ Mix gently with your fingers to combine—avoid crushing the poha. - 3
Add the Crunch :-
∆ For extra taste and crunch without cooking, add roasted chana.
∆ Sprinkle in small pieces of crushed roasted papad.
