We have to make two sauces the red sauce and the white sauce and both will cook in same wok. With these two sauces a beautifully aromatic and flavourful pink sauce will be made with the flavours of makhni gravy. Let's make. First thing first in a pan or pressure cooker add chopped tomatoes, onion, garlic, ginger, green chillies, cumin, black pepper corns, green cardamom along with 1 cup water and pressure cook it for 1 whistle on high flame and 2 whistle on low flame. Then off the flame.

And allow it to cool down. The process can be done in pan also. Once cool down grind it to a fine puree. Transfer it in a bowl and keep aside. Now for the white sauce in a mixer grinder add the milk along with cheese, cashews and all-purpose flour and grind it to a fine paste. You can use paneer in place of cheese to make it more healthier. Now in a big wok add half tsp oil along with 3 tbsp butter. Once get melted add the crushed ginger, garlic and green chillies and saute for a minute.

Now seive the red sauce in the wok so that the sauce will be smooth and silky. Then add salt, red chilli powder, garam masala powder and kasoori methi. Mix them well and allow it to boil. When start to boil lower the flame and cook for 2 minutes then add the white sauce directly and mix them well. When incorporated well allow it to boil again and then add the boiled penne pasta to it and mix well but very gently else it will break. To boil the pasta follow the instructions on the packet.

Boil it only till 80% done. Don't cook it full way else it will break when cooking with sauces. Once the sauce start to boil with pasta then lower the flame. Add oregano to it along with chopped green coriander leaves and mix well. Cook with 2 more minutes then off the flame. Add the remaining 1 tbsp butter on it to give the exact buttery taste.
