Prepare the ingredients - cut the carrot and tofu into cubes, and slice the bell peppers and onion.

Coat the tofu with soy sauce, then toss it in cornstarch. Fry in a pan until golden brown.

While the tofu is frying, prepare the sauce by whisking together all the sauce ingredients.

Remove the tofu from the pan, add a little oil, and sauté the carrot and onion for 5 minutes. Add the bell peppers and pineapple chunks and cook for another minute.

Return the tofu to the pan and pour in the sauce. Cook until the sauce thickens. Serve with rice and enjoy 😋
