Heat a little oil in a frying pan. If using leftover zucchini, warm it up in the pan. If using fresh zucchini, sauté the slices with a pinch of salt and black pepper until tender.

Add the leftover rice to the pan and stir to heat it through.

Beat the eggs in a glass/bowl, then pour them directly over the rice and zucchini, stirring gently so the eggs bind everything together. Cook until the eggs are fully set.

Serve hot with a drizzle of sriracha on top.
