Vibrant, hearty, and 100% plant-based – this vegan paella is packed with colorful veggies and perfectly spiced rice. Easy to make, full of flavor, and perfect for a cozy dinner!

Prepare the ingredients – wash and chop the vegetables. In a large pot, heat olive oil and add the mushrooms, bell pepper, green beans, and garlic. Cook for 3–5 minutes, then add the frozen peas and mix well.

Add the rice and spices, and mix well.

Add the cherry tomatoes and the liquids – coconut milk and water – along with the juice of half a lemon.

Bring to a boil, then reduce the heat to low and cook covered for 35–40 minutes, until the rice is tender. Check occasionally and stir, and if the rice has absorbed all the liquid but isn’t fully cooked, add a little more water.

Serve with lemon slices. Enjoy 😋
