With the arrival of cold weather and winter, this is definitely my favorite comfort food. The onions cooked this way are absolutely amazing.
Steps

Peel and slice the onions and leek.

Sauté them in a pan with the butter until they soften.

Add salt, pepper, and bay leaf.

Sprinkle the flour over the onions and stir for a few minutes.

Once browned, pour in the broth and cook for 20 minutes.

Toast the slice of bread.
- 7
Pour the soup into oven-safe bowls, place the toasted bread on top, and cover with coarsely grated Emmental cheese.

Bake at 350°F (180°C) for 10 minutes until golden brown (use the broil setting if available).

Serve hot when a crust has formed on top.
