Himachali Chha Gosht or Buttermilk Lamb Curry is a traditional and a royal Mutton curry made with Buttermilk and Lamb bone-in with few whole spices and Onion Chilli masala paste and Gram flour or Besan too. Also known as Khatta Gosht, it's a unique and a flavourful dish made extensively in Himachali homes. This dish derived it's name from 'Chha' in local dialect translates to Buttermilk. It's a great option for mealtimes especially special occasions and holidays.

Heat mustard oil in a pot. Add cumin seeds, cinnamon, green and black cardamoms, peppercorns and cloves. Saute until aromatic.

Add ginger garlic paste and lamb bone-in. Sear the lamb pieces until nicely browned on all sides. Keep stirring at regular intervals to avoid burning it. Keep the heat on a medium high to high depending on the requirement.

Pressure cook until tender. Or can slow cook as desired.

Meanwhile roast onions with dry red chillies together and blend into a paste with kashmiri red chilli, cumin, coriander and turmeric powders.

Add the onion-chilli masala paste to the lamb in the pot and cook until the oil separates from the mixture.

Whisk curd with water to make buttermilk. Then add gram flour and mix until smooth.

Pour the buttermilk mixture into the pot. Add salt to taste and simmer on a low heat.

Cook until the lamb is tender and the curry thickens, stirring occasionally. Adjust salt and even the consistency. It is usually a medium thick gravy.

Garnish with lots of chopped coriander leaves and sprinkle some garam masala. Serve piping hot right away. Enjoy!
Tips
For a richer flavour, allow the curry to simmer longer and adjust the spices according to your taste.
