Southern Style Chicken Bites with Roasted Sweet Potatoes & Green Beans

My partner and I spent the weekend after Thanksgiving in Tennessee visiting Dollywood. We had such a great time, that I wanted to make something southern inspired but still healthy as soon as we got home. Although the south is known for using lots of buttermilk, I decided to use Greek yogurt. This cuts down in fat and sugar while still providing that good ol' southern feel.
I strongly recommend preparing the chicken (Step 3) at least two hours in advance to really help with keeping the chicken tender and allowing the flavors to come together. If time is an issue, prepare as it is listed below. Enjoy!

Preheat oven to 425°F and line 3 baking sheets with parchment.

Toss sweet potato cubes with oil, pepper, and paprika. Roast 25 minutes, flipping halfway.

Mix yogurt, lemon juice, paprika, garlic, onion, and pepper. Add chicken and marinate 15–20 minutes.

Toss green beans with oil, pepper, and garlic powder. Set aside.

Coat chicken cubes in panko. Arrange on baking sheet and spray lightly with olive oil.

With 12 minutes left on the sweet potatoes, add chicken and green beans to the oven.

Bake chicken 15-18 minutes, flipping at 7 minutes. Roast Green Beans 12 minutes or until tender.

Serve chicken bites over roasted sweet potatoes and green beans. Serve with lemon wedge and low fat Buttermilk Ranch, if desired.
