Calzone 🇮🇹

This was my first attempt to make a spinach and cheese calzone. Calzone is an Italian dish which resembles a pizza turned over to create an empanada. It came out delicious but there are a few tips I would like to share:
- As you can see from the pictures, some of my filling oozed out through the ventilation slits at the top. I suggest making 3 holes instead of just 2, and following the adjusted measurements in the recipe below. Also ensure that you crimp the edges well to avoid side spills. It helps to leave an edge when adding the filling so that you can seal everything neatly.

Assemble all ingredients. Preheat oven to 425°F

Add 1 tbsp of oil and 2 cups of spinach to a nonstick pan. Cook for 1-2 minutes until it starts to wilt. Season with 1/4 tsp of nutmeg, 1/4 tsp of salt, 1/4 tsp of black pepper and 1/8 tsp of asafetida. Mix and allow to cool in its own juices for 5 minutes.

Remove from heat and drain as much liquid as possible. Set aside.

Flour a clean surface and divide dough into two, forming a ball.

Using your hands or a rolling pin, make a 7-8 inch circle, about 1/4 inches thick.

Add 2 tbsp of marinara sauce on half the circle. Then top with 1 tbsp of ricotta cheese, 1/2 the amount of spinach and 1/4 cup of shredded cheese.

Fold the dough over the filling and seal the edges by crimping it with your finger or pressing it down with a fork. Make 3 small slids on the top to ventilate.

Place on a baking sheet lined with parchment paper and brush 1tbsp of olive oil over it. Optionally sprinkle a small amount of sesame seeds. Repeat for second calzone.

Bake for 15-18 minutes, rotating tray half way to ensure even cooking for both calzones.

Serve hot with a side of marina cheese. Buonissino!
