Beetroot soup

Beetroot soup is a healthy, vibrant, and delicious soup made using beetroot, potatoes, onions, garlic, and simple seasonings. It has a beautiful deep red colour and a naturally sweet–earthy flavour from the beetroot.
It is light on the stomach, full of nutrients, and perfect for lunch, dinner, or weight-loss meals.

Steps

1. Sauté the vegetables
Heat oil in a pan.
Add chopped onion, garlic, and ginger.
Sauté for 1–2 minutes till fragrant.

2. Add beet & potato
Add chopped beet and potato.
Mix well.

3. Add water and cook
Add enough water to cover the vegetables.
Add salt.

4. Pressure cook
Close the lid
Cook for 4 whistles
(This makes beet & potato very soft.) - 5
5. Blend
Let pressure release naturally
Drain a little water (keep it)
Blend the veggies into a smooth puree

6. Adjust consistency
Pour back into the pot.
Add water if it's too thick.
Add pepper and adjust salt.

7. Simmer
Cook for 2–3 more minutes.

Add a spoon of cream for richness.
Add lemon juice for fressness
Garnish with coriander
Tips
1. Cut beetroot small
Smaller pieces cook faster and blend smoother.
2. Add a little potato
Potato gives natural thickness and creaminess without adding cream.
3. Don’t add too much water
Add only enough to cover the veggies. You can adjust later.
