To begin, heat oil in a pan. Add in the bay leaf, chopped ginger, garlic, and the chopped onions. Cook for a minute or two.

Add the carrots and saute for a minute to enhance the flavor.

Pour in the vegetable stock. (If you do not have vegetable stock available, dissolve two cubes of Maggi Super Seasoning in two cups of water.) Allow it to boil and then let it simmer until the carrots and ginger soften. Or pressure cook it for 3 whistles.

Let it cool a bit and blend until smooth. Return to the heat and adjust the consistency as per your taste. Check the salt and add more if required.

Turn off the heat. Finish with lemon juice and black pepper.

The Carrot Ginger Soup is ready to serve. Garnish with coriander leaves and serve with toasted bread.
