Wash and chop all vegetables.

Heat oil in a pan. Add mustard seeds, cumin seeds, curry leaves, and asafoetida. Add green garlic and onion. Sauté until soft.

Add all vegetables and salt. Mix well, cover, and cook on low for 5-7 min.

Add tomatoes, mix, and cook for 2 more min.

Add all spices. Sauté until fragrant. Add water as needed. Once it boils, cook for 2 min and turn off the heat.

Garnish with fresh coriander. Serve with roti, sweet and buttermilk.
Tips
Adjust the spice levels according to your taste preference.
