First, heat ghee in a pan. Add cumin seeds, garlic and ginger. Saute on medium heat for 1 minute.

Then add the carrots, a pinch of salt,coriander stalks and saute for 2 minutes.

Add 1/2 cup warm water and cook covered till carrots are tender and soft to touch.

Now add the chopped tomatoes, turmeric powder, chilli powder, salt and sugar as per taste and mix well. cook covered for further 10 minutes till tomatoes are soft and the mixture turns aromatic.

Take off from heat, cool to room temperature for 10 minutes. Then grind to a smooth paste.

Heat the soup by adding more water to adjust the consistency, adjust the seasonings as per taste and turn off heat before it reaches boiling point.

Serve immediately topped with butter and coriander springs. This soup tastes very delicious and eases cold, cough and blocked nose.
Tips
Make sure that the carrots are cooked before adding the tomato as it won't cook after adding the tomato.
For further enhancing the flavours, you can add Bay leaf and a piece of cinnamon too.
