Amla, also known as Indian Gooseberry, is no less than a super fruit. It contains vitamin C, calcium, iron, antioxidants, dietary fibre, flavonoids, alkaloids, and polyphenols. It also contains over 17 times the antioxidants of pomegranate and eight times its vitamin C content. To make instant amla candy, you will cook a paste made from amla (Indian gooseberries) without sugar and spices until it thickens, then flatten, cut, and coat the pieces. This "instant" method skips the multi-day sun-drying process of traditional recipes.

Wash the amla and steam for 12-15 minutes until soft. Let them cool, then remove the seeds and separate the segments.

Then Blend the steamed amla pulp and ginger into a smooth paste.

Now in a non-stick pan, combine the amla paste, mishri powder, regular salt, black salt and cornflour slurry. Then cook on medium heat, stirring, until it thickens over 10-12 minutes.

Now at this stage add lemon juice and ghee. Cook for another 2-3 minutes until the mixture is very thick and leaves the pan's sides.

Now take a tray, place a piece of butter paper on it, and grease it with ghee. Then pour this mixture onto a greased tray and flatten. Let it set at room temperature for about 1 hour. Once set, cut into desired shapes.

Mix the coating ingredients - mishri powder, chaat masala and black pepper powder in a bowl and mix well. Then add the candy pieces to the bowl and coat well.

Then keep the mishri coating amla candies in an airtight container for 3-4 months.
