Firstly, in a pressure cooker heat olive oil and saute finely chopped ginger. Now add chopped onion sliced and saute until onion soften.

Then add chopped carrots and saute for 2 minutes. saute until the ginger turns aromatic.

Then add water and salt.
Now cover and pressure cook for 3 whistles. Then
drain off and cool completely. - 4
Now transfer the cooked carrot into the blender and blend to smooth puree.

Now take the carrot puree into large kadai. Then also, add in leftover water used for cooking carrot. Then
mix and boil adjusting consistency as required. - 6
Further, add mixed herbs, black pepper powder and salt. Mix very well.

Now our very yummy and delicious Carrot Ginger Soup is ready for serve. Finally serve with garnish carrot ginger soup with pumpkin seeds and fresh mint leaves.
