I first tasted this simple yet intensely flavorful Tomato Chutney at my Dadi's (Grandmother's) house. I remember the smell of the Sarson ka Tel (Mustard Oil) and the sound of the tomatoes sizzling slowly in the old Kadhai.
The real magic of this chutney is in the way the tomatoes and potatoes are roasted till they are almost caramelized and smoky—bilkul dehaiti style! (totally rustic style)You can't achieve this deep flavor by just boiling them.
Paired with a warm, fluffy Thepla or a crisp Paratha, and a side of cold Dahi (Curd)... it's the perfect Indian comfort food Thali. Give this heirloom recipe a try and create some new memories!"

Heat mustard oil in a heavy pan. Add halved tomatoes and potatoes (if using).

Sprinkle plenty of salt. Cover and cook, stirring occasionally, until tomatoes are soft and skins peel easily, and potatoes are cooked.

Remove from heat and let vegetables cool completely.

Meanwhile, blend coriander, garlic, and green chilies into a smooth or coarse paste.

Peel the cooled tomatoes and potatoes. Transfer to a large bowl.

Gently mash the tomatoes and potatoes. Add the green paste.

Mix everything well, adjusting salt and consistency as needed.
Tips
For an extra smoky flavor, you can roast the tomatoes over an open flame before adding them to the pan.And once roasted and put mustard oil on pan and cook the tamato.
