Ingredients

1 hr (Prep 15 min + Cook 45 min)
4-5 people
  1. 1 cuplentils
  2. 1/2 cupchickpeas, soaked overnight
  3. 2tomatoes, chopped or blended
  4. 1onion, chopped
  5. 2celery stalks, chopped
  6. 2garlic cloves, minced
  7. 1 tspground cinnamon
  8. 1 tspground ginger
  9. 1 tspturmeric
  10. 1/2 cupfresh coriander, chopped
  11. 1/2 cupfresh parsley, chopped
  12. 2 tbspcooking oil
  13. Salt and pepper to taste
  14. 5 cupswater or stock

Steps

1 hr (Prep 15 min + Cook 45 min)
  1. 1

    Heat olive oil, sauté onions, celery, and garlic until soft.

  2. 2

    Add spices, tomatoes, lentils, chickpeas, and water/stock. Bring to boil.

  3. 3

    Reduce heat, simmer 35–40 min until lentils and chickpeas are tender.

  4. 4

    Stir in chopped coriander and parsley before serving.

Tips

Blend half the soup for a thicker consistency; garnish with fresh herbs for authentic flavor.
