Preheat the oven to 350°F (180°C). In a mixing bowl, beat the eggs with an electric mixer along with the oil and a pinch of salt until the mixture triples in volume.

In another bowl, mix the flour, baking powder, and turmeric. Gradually fold the flour mixture into the eggs. Gently mix with a spatula until smooth.

Pour the batter into a 10x7-inch (25x18 cm) baking pan. Spread evenly. Bake on the lower rack for 8 minutes, watching carefully.

As soon as it comes out of the oven, turn the sponge out onto a damp kitchen towel. Roll up the sponge and let it cool.

In a bowl, mix the ricotta, Greek yogurt, and lemon juice. Season with pepper and salt if desired. Spread the mixture over the sponge. Lay the smoked salmon on top. Roll up. Wrap in plastic wrap and refrigerate.
