Steps

Take fresh mushrooms. Clean nicely with running water. Cut into small pieces. Cut the onion and tomato. Keep it aside.

Collect all above given masala ingredients. Keep it ready to fry.

Keep a kadai on medium heat add oil and all whole masala spices. Fry till aroma comes out. Take it out from flame. Let it cool. Transfer to a mixer jar. Grind it into a nice powder.

Keep a kadai on low flame add oil, bay leaf, cumin seeds, fennel seeds curry leaves,red chilli and chopped onion saute for few minutes. Then add ginger garlic paste. Saute for two minutes.

Now add chopped tomatoes fry till it becomes smash. Add turmeric powder, coriander powder mix well.Then add the chopped mushrooms.

Saute for five minutes,add the red chilli powder and grind masala powder, give a nice mix and add half a cup water and salt. Mix well and close with lid. Let it cook for five minutes.

Open and saute for a while, water becomes dry and masala coated with mushrooms nicely. Add chopped coriander leaves. Mix well and remove from the heat. Chettinad mushroom fry is ready.Transfer to a serving bowl.

The healthy, tasty and spicy chettinad mushroom fry is ready to serve. Enjoy with steamed rice,dosa and roti.
