Steps

In a blender, add 1/2 cup water, 4-5 garlic cloves, and 1 inch ginger. Blend well and set aside.

In a wok, heat 1/2 cup cooking oil. Add hand-chopped chicken and cook until color changes and liquid dries (3-4 min).

Add 2-3 big green chillies and 1 tsp Himalayan pink salt. Mix well.

Add the ginger-garlic water from step 1. Mix and cook for 1-2 min.

Add 4 medium tomatoes. Mix, cover, and cook on medium heat until tomatoes are soft (4-5 min), then cook on high for 1-2 min.

Remove tomato peels.

Add 1/4 cup whisked yogurt, 1/2 tsp red chilli powder, 1/2 tsp garam masala, and 1 inch ginger (julienne). Mix and cook until oil separates (1-2 min).

Add 2 sliced green chillies and 1 tbs chopped fresh coriander. Mix well.

Sprinkle 1/2 tsp crushed black pepper.

Garnish with more chopped coriander and julienned ginger. Serve with paratha.
Tips
Adjust the spice level according to your taste preference. For a richer flavor, you can marinate the chicken in yogurt and spices for a few hours before cooking.
