Cheesy Cutlets from Leftover Khichdi and Roti

First, ready all the ingredients. In a mixing bowl take chopped onions, coriander and green chilies, chopped. Add salt and mix. Rest for 5 minutes. Crush leftover rotis to a powder in mixie.

Add in roasted besan and all dry masalas.

Add in the leftover khichdi and leftover roti powder. Mix well and form a bounded mixture.

Cut cheese cubes into small cubelets.

Take a portion of the mixture, flatten and place a piece of cheese in it. Seal properly. Roll into dry bread crumbs.

Similarly,make all the Cutlets. Shallow fry them using ghee on slow gas.

Turn when first side is crispy. Push to side of tava to roast the second side and keep next batch of the Cutlets in centre of tava for shallow fry. Wash,wipe dry and cut wedges of brinjal.

Deep fry the brinjal on medium fast gas. Take out on absorbent paper. Sprinkle salt and pepper on the wedges.

Serve with a smile and RESPECT FOR FOOD. I have served with brinjal wedges and garlic chutney. Happy Cooking 😊!! The melted cheese tastes ultimate.
Tips
Use ghee for shallow fry because khichdi -roti-ghee combo tastes best.
I have served these with Brinjal wedges to make it a complete meal.
Unless revealed,not easy to guess that these Cutlets are made using leftover khichdi and leftover roti.
