Steps

Use red peppers from your garden or local market.

Use green peppers from your garden or local market.

Wash the potatoes and boil them in plenty of salted water until tender.

Wash the peppers and place them in the air fryer basket lined with parchment paper. Cook at 375°F (190°C) for 15 minutes, turning halfway through.

Place the peppers in a paper bag and let them cool before peeling. Peel the peppers and remove the seeds.

On a serving plate, place the boiled potatoes cut into pieces in the center. Arrange sliced red onion around the potatoes. Arrange the peppers like rays of sunshine around the plate. Drizzle with olive oil, sprinkle with salt, oregano, and a splash of vinegar.
