Aloo Matar Paratha/ Potato and green peas paratha

Here's my favourite, go to recipe which is a wholesome and nutritious simple flatbread and a staple in Indian cuisine. Aloo Matar Paratha is a delicious and easy to cook indian flatbread made with an outer layer of whole wheat flour, chickpea flour, salt and ghee which is kneaded to make soft balls which are stuffed with a filling of cooked and mashed green peas, potatoes and spices. It's rolled into a thick disc and skillet baked with a brushing of ghee or oil to crispy golden treat. Served with fresh curd, pickle and a small dollop of butter for an extra special touch. First, mash the potatoes and green peas well. In a pan, add oil, temper with cumin seeds, ginger and garlic paste and saute. Then add asafoetida, the potatoes and green peas and saute for 2 minutes. The mix in spices as mentioned and finish with lemon juice, salt and chopped coriander leaves. Your stuffing for paratha is ready.

Cool the mixture well and divide in small balls. To make the outer layer, combine the whole wheat flour, besan, semolina and salt. Add 1 tablespoon oil and mix to a semi soft dough using water. Keep to rest for 10 minutes.

The make the paratha, keep the skillet to heat. Make equal sized dough balls. Press them to a small disc and stuff with the balls made from the stuffing mixture. Bring the edges together and press well to close the ball.

Roll out to a medium sized disc and place on hot skillet. Roast on medium heat from both sides till golden. Apply oil with a brush to make it crispy. Transfer to a hot box lined with kitchen towel to absorb the steam.

Prepare all the remaining parathas similarly. Serve with homemade fresh yoghurt, chutney and pickle. Enjoy a wholesome and nutritious meals at any time.
Tips
Ensure that the stuffing is well mixed . Cook the paratha well on both sides and then brush with oil or ghee else it will remain uncooked from inside.
Serve with a dollop of butter for added taste.
