Ingredients

  1. 4 piecesChicken drumsticks
  2. 2 tspMixed spices (for marinating)
  3. 1/4 tspPaprika
  4. 1/2 tspSalt
  5. 1/2 tspSpices (for wet mix)
  6. 30 gCornstarch
  7. 50 gAll-purpose flour
  8. 1 tspSeasoning of choice (for dry mix)
  9. 1Egg
  10. 60 mlSparkling water
  11. as neededSpray oil
  12. Buffalo sauce
  13. 2 tbspFrank’s RedHot Wings Buffalo Sauce
  14. 1 tbspKetchup
  15. 1/4 tspOregano
  16. 1 tbspSriracha
  17. 1/4 tspSmoked paprika
  18. Dipping sauce
  19. 80 gYogurt
  20. 1 tspLime juice
  21. 1/4 tspOregano
  22. 1/2 tspPaprika
  23. 1 tbspFresh coriander (chopped)
  24. 1 tbspFresh mint (chopped)
  25. 1/4 tspCumin

Steps

30 minutes
  1. 1

    Marinate chicken with mixed spices for at least 2 hours.

  2. 2

    In one bowl, mix flour, cornstarch, salt, paprika, and seasoning.

  3. 3

    In another bowl, whisk egg, sparkling water, and spices.

  4. 4

    Coat chicken: dip in wet mix, then dry mix.

  5. 5

    Place on air fryer pan, spray with oil.

  6. 6

    Air fry at 190°C for 30 minutes, flipping at 15 minutes.

  7. 7

    For buffalo sauce, mix all sauce ingredients.

  8. 8

    Coat cooked chicken in buffalo sauce. Optionally, air fry 2 more minutes and coat again.

  9. 9

    For dip, mix yogurt, herbs, oregano, paprika, and lime juice.

  10. 10

    Serve chicken hot with yogurt dip on the side.

Tips

Double-coat the chicken for extra crispiness and use sparkling water in the batter for a lighter texture.

The cornstarch in the flour mix is such a great tip — it really does make a difference with the crunch. I've been experimenting with air fryer chicken lately and the biggest thing I've found is not to overcrowd the basket, even if it means doing two batches. Worth it every time\!
