Steps

Peel and grate the bottle gourd. Combine all the ingredients. Stir for 2 minutes, allowing the water to separate. Add Eno soda and mix.

In a pan, add oil, mustard seeds, and asafoetida. Add water. Add turmeric, red chili powder, kokum, jaggery, and salt and stir. Bring the spiced water to a boil. Reduce the heat to medium.

Now mix both flours with the gourd and spices. Knead the dough. No water will be needed. Apply oil to smooth the dough. Form small balls with your fist. Place them in the boiling gravy. Cover and cook on a large plate. Check the balls occasionally to see if they are cooked. Add water as needed for the gravy and mix.

Serve hot, delicious, nutritious, easy and quick to make, juicy and spicy bottle gourd muthiya. Garnish with coriander leaves and white sesame seeds.
