Puree the cooked beet until smooth.

In a cup, combine the yeast with room temperature water and sugar. Stir and let sit for 5 minutes.

In a bowl, add the egg, pureed cooked beet, and the yeast-water-sugar mixture. Mix well. Then add the olive oil and salt, and knead until well combined.

Knead the dough by hand until it becomes smooth and elastic. Place the dough in a covered container and let it rise in the oven with the light on until doubled in size (about 2 hours).

Once risen, divide the dough into pieces of about 2 3/4 ounces (80 grams) each. Shape each piece into a classic roll or, as shown here, into a heart shape. Place the rolls on a baking sheet lined with parchment paper, spacing them well apart so they don’t stick together. Cover with plastic wrap and let rise for about 1 hour.

After rising, brush the rolls with the egg white mixed with water.

Bake the rolls in a preheated oven at 375°F (190°C) for 15 minutes, or until golden brown.

Let them cool completely.
