Ingredients

40 minutes
3 servings
  • 2large carrots
  • 1/2medium red onion
  • 4 tbspsweet white wine condiment
  • 1/4 cuppancake mix (can simply use flour)
  • 1 cuplarge flake oats (or any oats)
  • 1 tspbaking powder
  • 1/4 cupoat bran or whole wheat flour
  • 1large egg
  • 1/4 cupcooked lentils (or any beans)
  • 1 1/2 cupmilk/soy milk

Steps

40 minutes
  1. 1

    Stew the spices and veggies and sauce until soft (further cooking doesn't soften them much more so cook them until you like them!)

    Mix all wet and dry ingredients thoroughly - make sure the components like egg are fully homogeneous.

    Microwave first for 6 minutes, then in 2-3 minute increments

    Serve with toppings of choice! I liked balsamic glaze, cottage cheese, chilli peanuts
