Ingredients

  • Chicken marinade:
  • 400 gmsboneless chicken breast thinly sliced
  • 1/4 tspblack pepper powder
  • 1/4 tspsalt
  • 1 tspvegetable oil
  • 2 tbspcornflour
  • 1/4 tspbaking soda
  • 1 tbspvinegar
  • For the Mongolian Chicken:
  • 1/2green capsicum deseeded and cubed
  • 1/2red bell pepper deseeded and sliced
  • 1onion chopped into cubes and petals disintegrated
  • 1-2dry red chillies fried
  • 3-4green chillies slit
  • 5-6garlic cloves minced
  • 1 inchginger minced
  • 1 tbspwhite sesame seeds lightly toasted
  • 1/4 cupsunflower, vegetable or any neutral oil
  • For the sauce:
  • 1 tbspdark soy sauce
  • 1 tbspHot and Sweet Tomato Chilli Sauce
  • 1 tbspchilli sauce
  • 1 tbsphoisin sauce
  • 1 tbspvinegar
  • 1 tbspcornflour
  • 1 tbspbrown sugar or granulated sugar
  • As neededsalt to taste
  • 1/4 cupwater
  • 1/4 tspblack pepper
  • 1 pinchorange red food colour (optional)
  • 1/4 tspMSG / Ajinomoto

Steps

30 minutes
  1. 1

    Place the chicken in a bowl and add all the marinade ingredients. Mix well till the marinade coats the chicken evenly.Set aside for 30 minutes. Mince ginger garlic, deseed and cube the bell peppers and onion.

    When ready to cook, toss the chicken pieces in 2 tbsp cornflour.Shake off extra. Heat oil in a pan.Fry in batches till browned on all sides.Drain excess oil in a strainer.Remove excess oil.In 2 tbsp oil, add the minced ginger and garlic to the pan and cook for 30 seconds till aromatic and lightly browned. Add the bell peppers and onion and stir fry for 30 seconds. Set aside.

    Dilute cornflour with the sauce and brown sugar.Add a pinch of orange red food colour (optional).Add 2-3 tbsp water and salt to taste.Also add MSG / ajinomoto and bring to a boil.Boil for 30 seconds until just thickened.

    Add the fried chicken and stir fried vegetables to the pan and toss to coat with the sauce.Sprinkle lightly toasted sesame seeds and serve hot over rice, fried rice or chowmein.

Tips

For best result , toss the fried chicken in the sauce just before serving to keep it crispy. Top it with stir fried green and red bell peppers and cubed onions and toasted sesame seeds for a colourful weekend special dinner and relish !
