Fusilli with Broccoli, Anchovies & Lemon

I’ll admit it, I borrowed this recipe just like I used to peek at my smart classmates’ work during tests. But I love winter vegetables and especially broccoli. I’d made something similar before, but Cesare Battisti’s version is fantastic—he uses every part of the broccoli, nothing goes to waste!

First, remove the broccoli leaves and set them aside. Use a knife to cut off the broccoli florets into small green balls—these will be served raw on top of the pasta.

Now cut all the broccoli tops, leaving just the central stem. Dice the stem into small cubes.

Blanch the broccoli florets and diced stems for 4 minutes, and the leaves for 1 minute. Prepare the anchovies and slice the sun-dried tomato into thin strips.

In a skillet, toast the crumbled day-old bread with olive oil, garlic, and anchovies until the bread is golden and crispy. Add some lemon zest.

Blend the broccoli florets with a little olive oil, some cooking water if needed, salt, and pepper to make a creamy sauce. Cook the pasta in the same water you used to blanch the broccoli.

In the skillet where you toasted the bread, add a drizzle of olive oil and the juice of half a lemon. Then add the blended broccoli cream. Once the pasta is cooked, drain it and toss it in the skillet for about a minute.

Serve the pasta topped with the toasted bread crumbs, raw broccoli florets, sun-dried tomato strips, and one or two rolled anchovies. Finish with the broccoli leaves. Enjoy while hot!
