Ingredients

  1. Base
  2. 1 Cupdates
  3. 3/4 CupAlmonds
  4. 1 tablespoonscoconut oil (melted)
  5. Caramel centre
  6. 1 cupdates
  7. 1/2 Cupcoconut oil (melted)
  8. 1 1/2 tablespoonsunhulled tahini
  9. 1/4-1/2 cuporganic maple syrup (adjust to your own liking)
  10. Pinchseasalt
  11. 1 Cupraw cashews (covered and soaked in water 1hr, then rinsed)
  12. 1/4 Cupwater
  13. Chocolate top
  14. 1/4 Cupcoconut oil (melted)
  15. 1/4 Cuporganic maple syrup
  16. 1/4 Cupraw cacao powder

Steps

  1. 1

    Base, Place dates, Almonds and coconut oil in (blender/food processor) and pulse until it resembles fine crumbs and sticks together when pressed. Place in fridge to set

  2. 2

    Caramel Layer, Put dates, coconut oil, tahini, maple syrup, cashews, salt, and water into blender and pulse until completely combined and smooth (you may need to add a little extra water to help blend it but try and keep it to a minimum). Pour caramel mixture on top of base and return it to the freezer to set

  3. 3

    Chocolate layer, before doing this step make sure caramel layer is set. Add coconut oil, maple syrup and cacao powder in a bowl and whisk until glossy and combined. Pour over caramel layer. Place in freezer for an hour then remove and slice.
