French Beans Ki Sabji

Steps

Wash beans and cut into small pieces. Peel and chop potato.

Heat oil in a pan, add cumin seeds and let them crackle.

Add onions and sauté until lightly golden brown.

Add potatoes and sauté well.

Add beans, salt, turmeric, coriander powder, cumin powder, and green chilli. Pour spices over beans and stir well.

Cook for 6-7 minutes, stirring occasionally.

Grind tomato, garlic, and ginger into a smooth paste.

Add the paste to the pan and mix well.

Add 1.5 cups of water, mix, and cook until vegetables are tender.

Add coriander leaves, mix, and serve hot with roti or rice.
Tips
Sauté the onions until they are lightly golden brown for better flavor. Pour the spices over the green beans before mixing to ensure even coating.
