One of my favour dishes easy to make but very delicious.
Steps

Heat olive oil in a pan over medium heat.

Add red onion, garlic, and chili, sauté until soft.

Add sliced chorizo and cook slowly on medium heat, letting the flavors develop.

Pour in red wine, simmer until the sauce thickens and chorizo is tender.

Season with salt and black pepper.

Serve warm with bread rolls to soak up the sauce.
Tips
The longer you cook the chorizo on medium heat, the more flavor will be in the pan.
