Cut yellow chives and red bell pepper into thin strips. Slice luncheon meat into strips.

Heat oil in a pan over medium heat. Add luncheon meat and cook until lightly browned.

Add yellow chives and red bell pepper. Stir-fry quickly.

Season with a pinch of salt. Mix well and serve.
