Ingredients

30minutes
3 servings
  • 6eggs, boiled
  • 1/4 cupchicken, boiled, shredded
  • 1/4 cupmayonnaise
  • 1 teaspoonDijon mustard
  • 1 tbsp.lemon juice
  • 2 tbsp.green onions, finely chopped
  • 2 tbsp.carrots, diced
  • 1–2 tbsp. cilantro, chopped
  • To taste, salt
  • To taste, pepper powder and black pepper to taste
  • As required, pringles chips
  • 2 tbsp.chaat masala

Steps

30minutes
  1. 1

    In a bowl, mash chopped eggs to desired texture (chunky or smooth).

  2. 2

    Add chicken, mayonnaise, Dijon mustard, and lemon juice.

  3. 3

    Fold in green onions, carrot, and herbs.

  4. 4

    Season with salt and pepper.

  5. 5

    Chill for 30 minutes for best flavour.

  6. 6

    On a plate, spoon or pipe egg salad the center.

  7. 7

    Dip the edges of the chips in lemon juice and then coat with chaat masala.

  8. 8

    Arrange chips vertically in a circle, slightly overlapping, to form a flower shape. Press gently so they support each other.

  9. 9

    Assemble just before serving to keep chips crisp.
