📌Thandai is a traditional, refreshing Indian cold milk beverage, popular during Holi and summer, made by blending milk with a paste of nuts (almonds, cashews, pistachios), seeds (poppy, melon), and aromatic spices (fennel, cardamom, black pepper, saffron, rose petals). It is a sweet, nutrient-rich drink usually served chilled to beat the heat.
📌Here I made Thandai Kulfi with no cream, not fat. But a healthy version by using fox nut to give creamy and thick texture.

Steps

Soak makhana and thandai masala powder in 50 ml hot milk for 10 minutes.

Boil 250 ml milk, adding with sugar powder, and milk powder.

Turn off gas. Let it cool down completely. In a blender add milk, soaked makhana and thandai powder. Blend until turns creamy texture.

Pour in kulfi moulds, insert wooden stick in middle. Keep them in freezer at least for 5 hours to set perfectly.

Unmould all kulfi. Sprinkle chopped pistachios and rose petals.. Enjoy...
