Melt butter in a pot over medium heat. Add onion, garlic, and ginger. Cook for 10 minutes until golden.

Increase heat, add curry powder and turmeric. Stir for 1.5 minutes.

Add lentils, coconut milk, tomatoes, water, salt, pepper, and cayenne. Stir and bring to a simmer.

Cover and simmer gently for 30 minutes, stirring occasionally.

Check consistency: add water if too thick, simmer uncovered if too thin.

Stir in half the coriander. Adjust salt to taste.

Serve with flatbread or rice, topped with yogurt/raita and the rest of the coriander.
