Oven-Baked Chicken Drumsticks with Sweet Pepper Powder

Peperone crusco is a sweet dried pepper typical of Calabria and Lucania in Italy, and it's a real asset in the kitchen. If you can't find it, you can substitute sweet paprika. This recipe is a twist on Buffalo wings, using sweet pepper powder (Calabrian sweet pepper powder). The dish has a beautiful deep red color, is not spicy at all, but is very flavorful (with garlic, sugar, and vinegar). It was so good I forgot to take pictures!

Marinate the chicken drumsticks with the sweet pepper powder for at least 1 hour.

Then bake at 320°F (160°C) for at least 1 hour.

For the sauce: Meanwhile, melt the butter, add pressed garlic, 2 tablespoons sweet pepper powder, honey, sugar, cornstarch, and apple cider vinegar. Mix well, then cook over heat until the sauce thickens. Note: The vinegar and sugar really enhance the garlic flavor (I use 1/2 clove).

When the drumsticks are cooked (the meat and cartilage come off the bone easily), brush the thickened sauce over the drumsticks and bake for another 10 minutes.
