Slice potatoes lengthwise into wedge quarters.

In a 2 quart pot, pour in sugar.

Place potatoes into pot and cover with cold water. Mix potatoes until all sugar dissolves.

Preheat oven to 350° F

Soak for 30 minutes.

In a gallon sized ziplock bag, add salt, pepper, onion powder, smoked paprika, Italian seasoning and garlic powder. Shake well to combine.

Remove potatoes from water and thoroughly drain and blot as dry as possible.

Add potatoes to ziplock bag and pour in the oil. Seal bag and shake well for 2 minutes.

Add potatoes wedge side up to a foil-lines baking sheet.

Bake in oven for 30 minutes. After 30 minutes, test doneness by inserting a fork into a wedge. If needed, bake for outer crispiness.

Tips
It is very important to soak potatoes in cold sugar water. The soaking process draws out internal moisture from inside the potatoes and makes a crunchy outside and fluffy inside.
