I always saw pineapple rice in pictures and it looked so good I just had to try it for myself! I wanted to know if it tasted as amazing as it looked — and honestly it blew my mind! It tasted so good, even better than fried rice. Now it's one of my favorite quick and healthy meals and I can't stop making it!

Cut the pineapple in half, scoop out the flesh, and extract the juice.

Rinse the rice and cook it with pineapple juice and a pinch of salt until fluffy.

Heat olive oil in a pan, sauté ginger and garlic until fragrant.

Add onions, carrots, green beans, and green pepper. Stir-fry until just tender.

Gently fold the cooked rice into the sautéed vegetables.

Serve the rice in the hollowed pineapple shell.
