Ingredients

10-12 slices
  1. 3 cupsall-purpose flour
  2. 1 cupactive cultured unflavored yogurt, Icelandic Skyr or sour cream
  3. 2 teaspoonskosher salt
  4. 1/2 teaspoonactive dry yeast (or highly active dry yeast)
  5. 1 tablespoondried dill weed
  6. 1 cuplukewarm pickle juice
  7. 1/2 cuplukewarm water
  8. 1large dill pickle, chopped (do not use pickle relish because it has sugars that interfere with process)
  9. Kitchenware
  10. 6-8 quartInstant Pot
  11. 6-8 quart**Dutch oven or standard bread loaf pan

Steps

    In a large bowl, mix together the flour, kosher salt, yeast and dill weed.

  2. 2

    Add the yogurt (or skyr, sour cream) and pickle juice and mix by hand until a dough is formed.

  3. 3

    If the mixture is too dry add 1 or 2 tablespoons more of the yogurt.

  4. 4

    Form a ball with the dough.

  5. 5

    Fold in a chopped pickle. Be careful not to over mix the dough. You want the flour to be incorporated, but it's not going to look perfect.

  6. 6

    Line the Instant Pot with parchment paper and place the dough ball inside. Cover with the lid on and press the Yogurt button for 4 hours. If your Instant Pot does not have a Yogurt button, you can manually set it to 105°F for 4 hours.

  7. 7

    Remove the dough from the IP and lay on a floured surface. Knead and shape into a ball.

  8. 8

    Cover with a tea towel and cover.

  9. 9

    In the meantime, preheat a **Dutch oven (or bread loaf pan) in the oven at 450° F for 15 minutes.

    Carefully place the dough ball in the **Dutch oven (or bread loaf pan).

  11. 11

    Score the top with a knife and put on lid (or cover bread loaf pan with aluminum foil).

    Bake 25 minutes.

  13. 13

    Remove cover and bake for an additional 8-10 minutes or until browned.

    Remove from oven and cool on a rack.

Tips

** No Dutch oven? No problem.
Just use a standard bread pan. I use Fat Daddio. Just add some loose flour in the pan and on the sides before you put in the dough.

## Serving Requirement: Cut the bread and lift one piece in the air and whisper, "Ég mun finna þig í fjöru". This translates to "I WILL FIND OUT YOU ON A BEACH."--which means something like “I will get back at you,” “I’ll get my revenge,” If you can't sound out the Icelandic, you can use one of the idioms I provided.
