Ingredients

  1. 2 cupswarm water (about 480 ml)
  2. 5 cupsall-purpose flour (about 625 grams)
  3. 1 tablespoonsalt, leveled
  4. 1 tablespoonvinegar
  5. Filling:
  6. 17.5 ozcheese (about 500 grams, such as feta or a blend of Greek cheeses)
  7. 2 tablespoonsplain yogurt
  8. 1egg for the filling
  9. 1/2espresso cup olive oil (about 1.5 oz or 45 ml)
  10. 1 cupvegetable oil (about 240 ml) mixed with 2 tablespoons margarine or butter

    Mix the flour with the warm water, salt, olive oil, and vinegar. Set aside.

    Combine the cheese with the yogurt and egg.

  3. 3

    Divide the dough into 16 balls for the phyllo sheets (8 for the bottom, 8 for the top).

  4. 4

    Roll out each ball into a plate-sized sheet and brush each one with the vegetable oil and margarine (or butter) mixture.

  5. 5

    Place the first 8 sheets in the refrigerator while you prepare the other 8 sheets.

  6. 6

    Grease a large baking pan and layer the first 8 sheets together to form the bottom crust.

  7. 7

    Spread the cheese filling evenly over the base, then cover with the remaining 8 sheets.

  8. 8

    Fold the edges, brush with the remaining oil mixture, cut into pieces, and bake at 390°F (200°C) for 50 minutes.
