Ingredients

  • 1chicken thigh (per person)
  • 1medium chilli, thinly slixed
  • 1/2lemon, quartered and thinly sliced (skin on)
  • 3 clovesgarlic
  • 1one long red pepper, thinly sliced
  • 3plum tomatoes, sliced
  • Handfulcherry tomatoes
  • 1 bunchcorriander
  • 125 mlwater or chicken stock
  • 200 gcoarse cracked wheat

Steps

    Lightly salt the chicken, and then place into large sauce pan, on a low heat. Cook for 20 minutes and then turn and cook for another 5.

  2. 2

    Put chicken to one side, and gently fry the chilli, lemon and garlic. Then increase eat and add the peppers to the pan with tomatoes and soften, taking care not to burn. After about 5 minutes, tomatoes start to fall apart. Add cherry tomatoes and return chicken then sprinkle herbs and add stock/water. Reduce heat and add lid allowing some steam to escape for 15 mins.

    Add the wheat, bring to a boil and then set aside with lid on. Leave for 15 mins and then serve.
