The "Maillard reaction" is a chemical process that occurs when amino acids and reducing sugars react under heat, resulting in the browning and development of complex flavors in cooked foods. This reaction is responsible for the distinctive flavors and colors in items like seared meats, baked goods, roasted coffee and here in my recipe for Dulce de Leche.

Ingredients

Cook: 35 min NPR: 20 min
4 people
  • 2 (14 oz)can of SCM (Sweetened Condensed Milk)
  • Kitchenware Needed:
  • 4 (4 oz)Mason Jars
  • 1(6 - 8 qt.) Instant Pot
  • Canning Tongs
  • Water

Steps

Cook: 35 min NPR: 20 min
  1. 1

    Pour SCM into mason jars leaving some room at the top (about 1 1/2").

  2. 2

    Close mason jars finger tight.

  3. 3

    Place on trivet at the bottom of IP insert.

  4. 4

    Fill insert with water enough to cover 3/4 of the mason jars.

  5. 5

    Cook Settings:
    ---Temp & Pressure: High Pressure/Manual.
    ---Duration: 35 minutes.
    ---Release: Natural 20 minutes.

  6. 6

    Storage and Care:
    ---Carefully remove jars with tongs.
    ---Cool on kitchen counter for two hours.
    ---Remove lid and stir.
    ---Refrigerate.
