Bring water to a boil.

Meanwhile, sear the short ribs and beef bones.

Blend the peanuts until creamy, then add to the pot.

Add the short ribs and bones to the pot, then add the parsley and celery.

Chop the onion, bell pepper, garlic, and carrot; sauté them in a little oil, then add cumin, black pepper, bouillon, oregano, peas, and salt to taste.

Let it simmer for 40 minutes so everything cooks well and the flavors develop.

Meanwhile, sauté the noodles with a splash of oil and add turmeric.

Add the noodles to the pot and let it simmer for the remaining 20 minutes.

Meanwhile, fry the potatoes to serve with the soup.

Blend tomato, onion, and hot pepper (locoto); you can blend it if you like, this is optional as a side.
