25 meatballs
  1. 10 1/2 ozprecooked lentils (well drained) (300 g)
  2. 7 ozlactose-free ricotta (200 g)
  3. 2 tablespoonsgrated Parmesan cheese
  4. 2-3 tablespoonschickpea flour
  5. To taste dried fresh mint
  6. To taste sea salt
  7. To taste black pepper
  8. 1drizzle of olive oil (for finishing)
  9. 🧰TOOLS
  10. 1food processor or immersion blender
  11. 1large bowl
  12. 1baking sheet
  13. 1 sheetparchment paper
  14. ⏳️STORAGE
  15. 📍IN THE FRIDGE: Store in an airtight container for 2-3 days
  16. 📍IN THE FREEZER: You can freeze them after baking for about 1 month

    Drain the lentils and ricotta very well; the drier they are, the less binder you'll need.

    Roughly blend the lentils in a food processor to keep some texture.

    In a bowl, combine the lentils, ricotta, Parmesan, sea salt, black pepper, dried mint, and chickpea flour.

    Mix thoroughly: the chickpea flour will absorb any remaining moisture, making the mixture easy to shape.

    With damp hands, form walnut-sized balls and place them on a baking sheet lined with parchment paper.

    Drizzle a little olive oil on top to help them brown.

    Bake in a preheated oven at 400°F (200°C) for about 20-25 minutes, turning them halfway through.

    💡Let the mixture rest in the fridge for 15 minutes before shaping the meatballs: as the chickpea flour hydrates, the mixture will become even more stable.

    ❓️"Can I use rice flour?" Yes, but chickpea flour binds better when not using eggs.

    ⚠️Too much flour: Add one tablespoon at a time so the meatballs don't get too firm.
