Zucchini and Carrot Pie
For when someone doesn't like vegetables

Place all the diced vegetables in a bowl and add a glass of water.

Microwave the vegetable mix on high for 3-5 minutes, or until tender.

Once cooked, drain the vegetables. Add 3 eggs and a pinch of salt, then mix with a fork.

Pour the mixture onto the homemade crust. Bake for 45 minutes at 300°F (150°C).

For the crust: In a bowl, combine the self-rising flour, oil, warm water, and salt. Add the whole wheat flour last. Knead the dough and let it rest for 10 minutes. Roll it out and place it in a pie pan, then add the vegetable mix on top.

Top the pie with 4 slices of deli cheese over the vegetable mixture.
