In a skillet, add olive oil on medium high heat. Once hot, place seasoned tri tip in. Cook 5 min, flip, cook 5 min. Pull out and place in Crockpot set on low

In same skillet, toss in mushrooms and onions. Cook about 15-20 min, stirring several times, until they start to caramalize.

Add white wine, beef broth and pepper. Cook until boiling then pour in Crockpot. Cover. Cook 6 hours

Once meat is done, in same skillet add butter and flour, whisk making a roux. Once thick pour in all the liquid the beef cooked in, whisking constantly for about 5 min.

Place your delicious sliced tri tip (cut against the grain) on a plate, cover with gravy. BAM
